Food in Moscow: Unusual culinary delights

We offer you a selection of restaurants where you can taste dishes of molecular gastronomy, beetroot salad ice cream and Japanese sandwiches.

Varvary Restaurant – "Varvary" (literally, "Barbarians") is one of the restaurants of Anatoly Komm’s chain. Chefs preserved the essence of a traditional Russian dinner, but changed its form beyond recognition. What they deal with is called molecular gastronomy, which creates recipes based on hundreds of experiments with the products. They serve liquid Borodinsky bread, candy made from chicken liver, chopped up giblets and much more. 8a Strastnoy Boulevard.

Juice Bar in TsUM – Head chef Anatoly Komm’s molecular gastronomy. Ice cream which is served there can hardly be called a sweet or a dessert, as the basis of the recipe is beetroot salad, Russian salad, borsch, and "dressed" herring. Such an unusual viand is a type of cold dish served before lunch or dinner. 2 Petrovka Street.

Puff Point – The puffs are cooked in this place – a new type of sandwiches with stuffing made from king crab, homemade cold boiled pork or chicken with curry sauce. The cost of one puff is 120-200 roubles. 1 Myasnitskiye Vorota Square, bldg. 3.
